  • Prepare the costing for recipes and menus preparedby the Executive Chef and suggest the selling price - Perform testchecking on the receiving of goods at the hotel to ensure that theprocedures are followed correctly - Prepare daily flash report offood costs and verify daily outlet void control sheets - Attendmajor banquet events with open bar, prepare P&L statement ofmajor banqueting events and prepare banquet revenue breakdownsummaries - Randomly test the inventory of outlets by reconcilingthe opening stock with the closing stock, taking account of storeissues and sales - Verify and control complimentary bar orderforms, fruit baskets in the rooms, etc.
  • Cost Controller shouldhave graduate degree or accounting and at least two years previousexperiences within a hotel environment.
  • Excellent verbal andwritten English communication skills, a sound knowledge of F&Bcost controlling and computer literacy is a must, while knowledgeof Opera, Micros, FBM and SUN System is an asset.
